टिप्स
– हर दिन दूध से अतिरिक्त मलाई निकाल कर एक बर्तन डालकर फ्रिज में रख दें.
– जब बर्तन में लगभग एक किलो क्रीम हो जाए तब इसमें एक से दो चम्मच दही डालकर रात भर के लिए फ्रिज से बाहर रख दें.
– सुबह लगभग एक ग्लास फ्रिज का ठंडा पानी मलाई में डाल कर इसे मथनी से मथ लें या फिर मिक्सर जार में डालकर चला लें.
– कुछ देर में क्रीम की ऊपरी सतह पर मक्खन (बटर) दिखने लगेगा. बटर को हाथों से निकालकर एक अलग बर्तन में कर लें.
– अब गैस पर तेज आंच पर एक कड़ाही रखें और इसमें मक्खन डालकर पिघलाएं. बटर को चमचे से चलाते रहें ताकि यह कड़ाई के तले में न चिपके.
– मक्खन पिघलने के बाद मध्यम आंच पर इसे और पकने दें.
– घी को ज्यादा नर्म और दानेदार बनाने के लिए इसमें चुटकी भर नमक डाल दें.
– धीरे-धीरे मक्खन का घी बनना शुरू हो जाएगा. इसे सुनहरा होने तक पकाएं.
– फिर गैस बंद कर दें और घी को ठंडा होने दें.
– उसके बाद छलनी से घी छान कर दूसरे बर्तन में निकाल लें.
